A Sunday Recap

Ah, Sundays. It is probably the best day of the week. It should be a day of fun and relaxation. And for the most part our Sunday this week was fun and relaxing. Like good Catholics we went to Mass (early, 8 AM!), came home, and worked in the garden. I decided that some bushes were too big and overgrown for the space they were in and D kindly offered to dig them out for me. I think halfway through he may have regretted that offer. It wasn't easy.

And Jo, well, she was just Jo. She wasn't about to spend her day working in the garden.

After lunch D took the mini-Mini to Lowes to pick up some finishing touches for our upstairs bathroom. And then, dinner. This week we decided to recreate my not that much younger brother's Sunday dinner from last week.

We did make a couple of changes.

Instead of using a plain pork roll with apple wood bacon, which by the way Wal-Mart doesn't carry, we used an apple bourbon pork roll with plain bacon.

Let me just say it tasted excellent. I have to say it doesn't look as good as C-2's did in his pictures. For one thing, there wasn't nearly enough rub for all of those rolls. I only had enough for four of the rolls. Next time I will double it. We also think we will cut the bacon in half lengthwise so the roll is wrapped only around the center. I think that would be plenty of bacon. But as far as taste, this was a winner!

We also had different sides. Pioneer Woman's corn casserole and mozzerella with a slice of tomato with balsamic vinegar drizzled on top. I wonder what we will be having next week?

There is an easier way to get out old bushes it's called a rope and a truck.

I will be posting the latest Sunday Dinner episode in the next couple of days. I will tell you this though if I opened a restaurant in this area and offered what I made today I would take this area over.

We also made the tenderloin albeit without apple smoked bacon. Jack's no longer carries it and no one else had it. I also ran out of toasted fennel on the first round. Solution -- toast up some more! We loved it; I'm waiting to hear what dad says. He stopped over so I sent a taste home with him.

i got drenched today on my ride home-i was sprinting to get home before the wave of storms came through adn the cutest little puppy was running around one of the roads. i spent 15 minutes knocking on peoples doors until someone knew who he belonged to-i couldnt leave him on the road! so that made me late enough to get soaked...

I forgot to mention I made sandwiches with the leftovers. Just might be some of the best tasting sandwiches I have had in awhile.
